If you ask me what my biggest weakness is, I would say chocolate cake without even thinking twice. I believe my obsession with chocolate cake began since I was a kid. Here is a little story behind it. I was seven, and It was my birthday. Like every kid, I was on cloud nine! Why wouldn't I be? For one day, the whole world seemed to revolve around me. My parents had planned a party for me, and I proudly distributed the invitations in my classroom the similar day. It was 4 in the evening, and I stood there all dressed up like a princess, (since I was the showstopper of the party) inspecting if all the arrangments were made right. Decorations-checked! Snacks-checked! Games-checked! cake-ch, uh oh, where is the cake? And all of a sudden, thick layers of dark clouds occupied the sky (okay, I was being overdramatic). No, but seriously, where was the cake? What's a party without a cake? Now, what will I treat my friends with or how will I face them in school? (though I was too young to think all this).
Actually, I was excited about the cake more than I was excited about the party. Watching me all washed out, my dad assured me that he would surely find a fix to it. You know dads are superheroes. But in my case, it was my mom- superwomen! We would have easily got cake delivery if it was not back in the ’90s. My friends had started arriving already when my mom comes to the rescue. She went to the kitchen, cast some spells, and in no time she was back with an adorable chocolate cake, even before we finished our games segment. You must be thinking I’m exaggerating, right? But believe the cake was prepared in less than one hour. That's why I'm here to share its recipe. I always thought that my parents actually brought the cake and hid it from me to scare the hell out of me, but it was some years back when I realized that my mom actually saved the day for me. This chocolate cake recipe is not only easy but flourless too. So, let's begin with the recipe.
For the Cake
1 cup bittersweet or semisweet chopped chocolate
1/2 cup unsalted butter, cut into large chunks
1 teaspoon instant espresso powder
1/4 cup hot water
1 cup granulated sugar
4 full-size eggs
3/4 cup unsweetened cocoa powder
Cooking spray, for pan
1 cup semisweet choco chips
1/2 cup heavy cream
Method of Preparation
Let's start with preparing for the cake.
Add butter and chocolate in a heatproof bowl.
Half fill a saucepan and place it on a simmering flame. Place that heatproof bowl in the saucepan and stir until butter and chocolate melts.
Meanwhile, preheat the oven at 350° F.
Now add sugar and espresso to the above-prepared mixture. Mix well until blended thoroughly.
Now carefully add eggs and whisk properly then add cocoa powder. Make sure you do it step by step.
Grease a pan with cooking spray, and pour the prepared batter. Place it into the preheated microwave and bake for about 35 minutes.
Remove it from the oven and let it cool completely.
Meanwhile, prepare the ganache. Take a small saucepan and add heavy cream to it. Place it on the simmering heat.
Add chocolate chips to a heatproof bowl and then pour that hot cream on the chocolate chips. Let it rest for about one minute and then blend it.
Now pour it over your cake and smoothen it with a spatula. Freeze it in the refrigerator until set. Tada! Your cake is ready.
Decorate with raspberries and serve.
