Small balls of the mixture are deep fried in oil. In a separate pan a thick and creamy is made and after that, it is poured over the fried koftas. The cheese balls absorb the moisture from the gravy and become soft. A good malai kofta will be soft enough to melt in your mouth.


This is another popular cottage cheese preparation made with green peas. The cottage cheese is cut into cubes and made into thick gravy. Addition of spices like turmeric, cumin, red chili powder, and coriander give the dish it’s rich color and flavor. However, the USP of the dish remains to be the matar or green peas. This dish works with plain rice, pulao, naans, and parathas too.


They use chickpeas or garbanzo beans to make chana masala. It is a delicious gravy preparation popularly had with flatbread. The chana is soaked overnight and cooked separately with just salt, water, and turmeric for color. Later on, it is made into gravy made from tomatoes, onion, ginger, garlic and green chilies.
